Baking baci; irresistible Italian cookies!
With temperatues +30C it was actually too hot to bake anything. But I was very keen to make these ‘Baci’; a recipe given to me by my colleague Giorgia. I love the mix of salty almond and cheese cookies!
80gr cold butter, 100 gr plain flour, 100 gr chopped almonds, 80 gr hard cheese (like Parmigiano Reggiano, or old sheep cheese), salt, 20ml water/white wine
Put all ingredients in a bowl and mix until you have a smooth dough. Make about 40 small balls and put them on a baking tin. Put them in the 180C oven for 20 minutes. Take them out of the oven and leave to cool.
Take any kind of creamy cheese.
Take one cookie, put cheese on the flat side and then put another cookie with the flat side on top of it. This is the baci, the kiss!
